Simple Vanilla Cake

Makes one two-layer cake with frosting.

This simple white cake is a perfect base recipe. Jazz it up by mixing up fillings and flavours!

Vanilla Cake Slice
You will need:

For sponge cake
  • 3 large eggs (separate yolks and whites)
  • 1 cup fine white sugar
  • 1/4 cup hot water
  • 1 cup flour, sifted
  • 1 tsp baking powder
  • 1 Tbsp vanilla

For frosting
  • 1/2 cup unsalted butter, softened
  • 1 1/2 teaspoons vanilla extract
  • 2 cups confectioner's sugar (also labelled as icing sugar)
  • 2 Tbsp milk

For Sponge Cake:

  1. Preheat oven to 350 degrees Farenheit, and line two cake pans with parchment paper.
  2. Using a whisk, hand mixer, or stand mixer fitted with the paddle attachment, beat the sugar, vanilla extract, and eggs together until light.
  3. Add the hot water and beat until the mixture is thick and creamy.
  4. In a separate bowl, sift together the flour and baking powder. Mix the dry ingredients.
  5. Gradually incorporate the dry ingredients in to the wet ingredients.
  6. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites in to the mixture.
  7. Fill each cake pan approximately half-way - this will prevent the cake from spilling over after rising during baking.
  8. Bake for 40 minutes, or until a toothpick inserted comes out clean.
  9. Allow cake to cool completely before removing from the cake pan, or frosting.

For Frosting:

  1. Using a wooden spoon, hand mixer, or stand mixer fitted with the paddle attachment, cream the butter until light and fluffy.
  2. Add the vanilla extract and combine.
  3. Gradually beat the confectioner's sugar in to the mixture, until smooth and fully incorporated.
  4. Pour the milk in to the mixture and combine for approx 3-4 minutes until smooth

To Assemble:

  1. Spread an even layer of frosting between the cake layers.
  2. Use a palette knife or spatula to smooth frosting on the top of the cake.
  3. Add your favourite toppings, and enjoy!
